Ingredients
  

  • 2 cups mashed potatoes, cooled
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 1/4 cup sliced green onion
  • 1 large egg
  • 1/2 cup all purpose flour
  • 1/2 cup panko breadcrumbs
  • 1/4 tsp garlic powder
  • 1/4 tsp salt, plus more to taste
  • 1/4 tsp black pepper
  • 2 tbsp olive oil, for baking

Method
 

  1. Combine mashed potatoes, cheddar, bacon, green onion, and seasonings.
  2. Shape into 16 balls and chill for 20 minutes.
  3. Coat each ball in flour, egg, then panko.
  4. Bake at 425°F for 20 to 25 minutes, flipping halfway.

Notes

  • Chill potato mixture fully before shaping and coating.
  • Flip bites halfway through baking for even crispness.
  • Freezes well unbaked for later use.
  • Reheat in the oven rather than the microwave to keep the coating crisp.
